Yiannos’s roast fish

A few months ago Yiannos was invited to a TV cooking program.

Cooking at home for your family or friends is one thing; cooking and demonstrating what you do on national TV is a completely different one. You can imagine Yiannos’s anxiety!!!! He had to think of the menu well in advance and send the recipes to the chef in order to do all the shopping. After a couple of days of insomnia the Big Day arrived. It was not live on TV but it was shot in real time so intervals or “cuts” were out of the question.

He had prepared a summer menu with salads, fish and a fresh fruit jelly for dessert. Usually, I am the “fish cook” of the family, it’s my specialty. Maybe because fish is one of the most easy dishes to cook! I must say that this time Yiannos has surpassed me. I didn’t want to admit it but then I tried his recipe and realized that his final touch with the orange made all the difference! You see, I usually follow recipes whereas Yiannos always creates recipes!!!

I must also say that he looked very relaxed and photogenic on TV, so all this anxiety was completely unnecessary. Since then he gained some fans. People recognize him when he goes to the farmer’s market and they exchange recipes and cooking tips. So basically one can say that I am married to a celebrity!!!

Here is Yiannos’s version of Roast Fish

YOU WILL NEED

  • Fillets of seabass (your fishmonger can do it for you)
  • Slices of fresh oranges
  • Salt, pepper and oregano
  • 1 table spoon of good quality olive oil

METHOD

  • line your oven tray with a sheet of baking paper
  • put the orange slices on it
  • put your fish fillets on the orange slices
  • season your fillets with salt, pepper and oregano
  • sprinkle the olive oil
  • put it in the oven for 20 minutes on 180°c

That’s it! As easy as that.

You can serve it with a seasonal fresh salad and of course a nice, aromatic sauvignon blanc!
