Summer cooking part 1

As you already know cooking is one of my passions. What you might not know is that I enjoy grocery shopping as well.

Especially when I go every Saturday to the producer’s market for our fruit, vegetables and many more.

Fresh home grown vegetables, dried or fresh herbs, fruit, local goat cheese (halloumi, anari), yogurt, fresh free range eggs, sausages and bacon, wood oven baked bread and pulses, all from villages around Limassol, are there.

Now that Summer is here we always try to cook lighter meals. Courgettes are in season so I thought of sharing with you this very simple yet delicious dish that can be prepared in 15 minutes.

Summery courgettes

Ingredients

  • 1 Kg of courgettes, as small and as fresh as possible
  • Fresh mint, chopped
  • Juice of 1 lemon
  • 3 tbsp virgin olive oil
  • Salt and pepper to taste

Method

  • Wash the courgettes
  • Put them in boiling water and cook for 5-8 minutes depending on the size of the courgettes. They should be cooked “al dente”
  • Drain them and immerse them in cold water so that they will keep their green colour and they will stop cooking
  • Drain them again
  • Mix the lemon juice, olive oil, mint, salt and pepper
  • Serve them on your favourite platter and pour the sauce on top

You can accompany this dish with Greek yogurt and a nice loaf of bread.

Variation: you can replace fresh mint with fresh basil.
