My homemade Granola

In my opinion breakfast is the most important meal.

Starting your day with a tasty, healthy and nutritious breakfast can keep you fit and strong for the whole day. It is nice to have a variety of breakfast options so we don’t get bored. Granola is one of them and you buy it from any supermarket in a variety of flavours, but of course a homemade one is much better. This way you can make it up to your taste; how sweet or how crunchy you want it to be. You can eat it with Greek yogurt or milk – almond, coconut, soya – anything goes and you can add fresh seasonal fruit if you wish.

Dry ingredients

  • 4 cups oats
  • 2 cups raw nuts & seeds (I put almonds, pistachio nuts, walnuts, hazelnuts, chia seeds, pumpkin seeds, sunflower seeds)
  • ½ tsp cinnamon
  • ½ tsp ground nutmeg1 cup coconut or more oats
  • ½ cup chopped dried fruit (I put raisins and goji berries)

Wet ingredients

  • 2/3 cups coconut oil (melted)
  • 1/3 honey or maple syrup or any other sweetener (optional)
  • 1 tsp vanilla or almond flavour

Method

  • Combine the dry ingredients except the dried fruit
  • Combine the wet ingredients
  • Mix the dry and wet ingredients together
  • Spread them on a baking tray and bake in a preheated oven, at 150c for about 40 minutes, tossing occasionally, until golden
  • Stir through the dried fruit and leave it to cool.
  • Store in an airtight container
