Homemade Protein Snack

I first tasted this “flourless bread” at our friend’s E house. She called it “bread” and she served it with the aperitif topped with olive paste or avocado.

It was so delicious and I was so excited when I found out that it was very healthy, protein full, no carbs at all and very light. It was made exclusively of different kinds of seeds, eggs and olive oil.

When we went back home, I tried the recipe. We all liked it at home. I was so happy that I found something so healthy to replace bread.

After that I begun to experiment. I added different kinds of nuts and dried fruit. The result was “yummy”. I am going to share my recipe but you can actually play with the ingredients according to your taste.

INGREDIENTS

600 gr of a mixture of nuts, seeds and dried fruit. I used:

  • Almonds (chopped with the knife)
  • Walnuts (chopped with the knife)
  • pistachio nuts
  • sunflower seeds
  • sesame seeds
  • pumpkin seeds
  • chia seeds
  • linseeds
  • dried apricots (cut in small pieces)
  • dried prunes (cut in small pieces)
  • goji berries
  • cranberries (frozen ones)

2 whole eggs

2 egg whites

4 tb spoons olive oil

METHOD

Mix all the nuts, seeds and fruit together in a bowl.

Slightly beat the eggs and olive oil and put them in the bowl with the nuts etc.

Stir well and put your mixture in an aluminum container or a bread tin.

Bake in a medium oven (180 ° c) for approx. 30 minutes.

That’s it! Healthy, easy, delicious and carbs free

VARIATIONS

  • For a sweeter taste you can also put dates.
  • You can add some oats

Just make sure you keep the quantity to 600 gr.
