Have you ever thought of making Banana Jam? No? Neither have I. We are used to strawberry jam, apricot jam, citrus marmalade but not banana.
Recently I came across a recipe for Banana Jam on the internet. I made some trials and variations and I ended up with the following recipe. If you follow my “step by step” method there is no way of failure.
You will need
- 1 kg ripe bananas cut in slices
- 650 gr sugar (initially I put 800 gr but it was too sweet so I reduced it)
- 200 gr freshly squeezed orange juice
- 50 gr freshly squeezed lemon juice
- a pinch of cinnamon
- vanilla
- 2 shots of Rum
