Banana Jam

Have you ever thought of making Banana Jam? No? Neither have I. We are used to strawberry jam, apricot jam, citrus marmalade but not banana.

Recently I came across a recipe for Banana Jam on the internet. I made some trials and variations and I ended up with the following recipe. If you follow my “step by step” method there is no way of failure.

 

You will need

  • 1 kg ripe bananas cut in slices
  • 650 gr sugar (initially I put 800 gr but it was too sweet so I reduced it)
  • 200 gr freshly squeezed orange juice
  • 50 gr freshly squeezed lemon juice
  • a pinch of cinnamon
  • vanilla
  • 2 shots of Rum

Method

  • Put the sugar, orange juice and lemon juice in a pan and heat until the sugar dissolves, stirring occasionally.
  • Add the bananas and let it boil for 10 minutes, stirring occasionally and checking for the desired consistency.
  • At the end add the cinnamon, the vanilla and the rum and take it off the fire.
  • Put the jam, while it is still hot, in sterilised jars, close and turn the jars upside down until it cools down.
