An impromptu lunch with friends

As I already mentioned in previous posts, we like to have friends over for lunch or dinner. Usually it is a spur-of-the-moment thing. “Come over for dinner” or “We are going to cook spaghetti, why don’t you join us” etc.

It is even more enjoyable when you and your friends cook together, or….. they just take over and cook everything!

That’s what happened last Saturday.

It was a “girl” thing. Teresa, Roxy and Sarah came over for “wine and dine”. We – but to be honest, predominantly Teresa and Roxy – cooked delicious Spaghetti al Limone as we were all sipping wine, munching on nachos and guacamole, laughing and spreading even more light and love in my already bright and cosy kitchen.

Here is the recipe for Teresa’s Spaghetti al Limone

You will need:

  • Spaghetti (we used organic spelt flour spaghetti but this is up to you)
  • Parmesan cheese, grated
  • Zest of two lemons
  • Olive oil
  • Fresh lemon juice from 3-4 lemons
  • Fresh basil leaves, chopped
  • Salt

Method:

  • Mix the parmesan with the olive oil, the lemon juice and let it sit while you boil the spaghetti
  • Boil the spaghetti for 7-8 minutes (al dente)
  • Strain the spaghetti, serve them in a platter and add on top the parmesan, olive oil and lemon mixture
  • Sprinkle on top and mix the lemon zest and the basil leaves
